This healthy and hearty soup is a hit with everyone who tries it! Even my kids who said “Kale?!!!”loved it. Then, went Yummm. Sometimes you just have to fib a little to get them to try stuff, you know?
Sausage Kale Red Lentil Soup Recipe
1 Tbsp Olive Oil
1 onion diced
1 lb Italian Sausage
1 C diced carrot – 2 large or 20 baby
2 stalks celery
2 clove garlic finely chopped
1 white potato
1 jalepeno pepper finely seeded and chopped
2 springs of fresh rosemary – off stocks and finely chopped
1/2 tsp pepper ground
1 tsp cumin
1/2 C red wine
6-8 C water/ chicken stock combination half and half
1 can tomato soup
1 3/4 C red lentils
4-5 large stocks kale trimmed and finely chopped
Begin your soup base by heating the olive oil in a large pot and add the sausage. Break up into small pieces and cook until no longer pink. Add the onion, carrots, celery and cook until soft. Toss in the garlic and stir into the vegetables. Next, add the diced potato. The spices; the jalepeno pepper, rosemary, ground pepper and cumin can be added to the pot at this stage. Give them a couple of minutes to cook through.
Finally, add the remaining ingredients to the pot; the wine, water and stock, the tomato soup, the lentils and the kale. Bring to a boil and then reduce to a simmer for 30 minutes or until the lentils are tender.
