A different twist on the traditional macaroni salad. If you don’t like the sweet creamy salad, this one is definitely for you!
Oriental Macaroni Salad Recipe
2 C uncooked elbow macaroni
2 large carrots or 15 baby carrots cut into 1 ” julienne strips
1 C snow peas cut into diagonal strips
2 green onions finely chopped
1/2 – 1 whole green pepper (or red) thinly sliced or julienne in 1″ pieces
1/2 C Light mayonnaise
1/2 C sour cream – or light sour cream
1 Tbsp apple cider vinegar
1 Tbsp low sodium soy sauce
1/2 tsp ground ginger
1/4 tsp pepper
Begin by cooking macaroni according to package directions. Once cooked, rinse in cold water. Add pasta to a large mixing bowl and combine with the vegetables. Stir together gently until you have a nice mixture.
The dressing ingredients can be combined in a small bowl or a jar with a lid and then shaken. Stir the dressing ingredients into the pasta and vegetables. Chill until ready to serve. The flavors will mellow as it sits until service time.
