Mixed Berry Cobbler
Delicious Mixed Berry Cobbler topped with whipped cream

You can just smell summer in the air when you hear words like “mixed berry” and “cobbler”.  The bonus for this recipe, is that frozen berries work so well that you don’t have to wait for the expensive summer berries to come out in the tiny containers and can make this all year long.  The same bag of mixed berries you use for your smoothies work great for this recipe! (Look for my post for a great mixed berry smoothy to start your day!) I love it when one ingredient will do double duty 🙂

Mixed Berry Cobbler

1/4 C butter, softened

1/2 C Sugar

1 C flour

2 tsp baking powder

1/2 C milk

2 C fresh or frozen mix of black berries, blue berries and raspberries

3/4 C apple juice or cranberry apple juice

 

In a mixing bowl, cream together the butter and sugar for the first step in the Mixed Berry Cobbler.  Scrape the sides of the bowl half way through the mixing while you cream.  Combine the flour and baking powder in a small bowl.  Add the flour to the creamed mixture alternately with the milk, starting and ending with flour.  Mix until the batter resembles a thick cake batter.

Pour into a greased 6 C baking pan.  Cover the batter with the berries. Pour the juice all over the berries.  It should look like this.

A little bit of magic happens during the cooking process.  The berries sink to the bottom of the pan as the batter rises. Bake at 350F for 45-50 minutes or until golden brown.  Serve warm with ice cream or whipped cream if desired.  Serves 6-8.
