Kale is becoming the new “superfood”. You will find it in everything from salad to soup to smoothies. No wonder… it is delicious and so good for you. Kale Cranberry Apple Salad Recipe
2 Large stocks Kale finely chopped
1 Red Apple – Gala or Fuji cored and finely Chopped
1/3 C Almonds roughly chopped
1/4 C Feta cheese
1/4 C dried Cranberries
Combine Salad ingredients- Kale, apple, almonds, feta cheese and cranberries. Toss well to mix. Stir the dressing ingredients together to mix well. You can mix them in a shaker jar and shake for about 20-30 seconds. This method works very well. Once mixed well, add to the greens. Kale is very resilient and will not wilt like other greens when dressing is added to it. In fact you want to add it early to help the lemon juice soften the kale a little before serving.
The cranberries and apples will give a nice sweet taste and contrast with the saltiness of the feta and crunch of the almonds and kale. It would be pretty on your holiday table as well. Enjoy!

2 Tbsp Lemon Juice
1/4 Tsp course Kosher Salt
1 Clove Garlic – mashed
4 Tbsp Olive Oil
2 Tbsp grated Parmesan Cheese
1 tsp Sugar
