Holiday Sugar Cookie Recipe
2 sticks cold butter
1 C granulated sugar
3 C all-purpose flour
2 tsp baking powder
3/4 tsp vanilla extract
1/2 tsp almond extract
Cream butter and sugar together until lightened color appears. Remember to scrape down the side of the bowl every few minutes as you beat the butter and sugar. Add the egg and extracts. Beat again until smooth and fluffy, scraping the bowl again. Combine the flour and baking powder in a separate bowl and then add to the butter mixture slowly to avoid a cloud. Mix until the ingredients come together and form a ball.
Put dough out onto a floured counter and kneed until you form a nice smooth ball. This will only take a few seconds. Roll out your cookies to 1/8-1/4 thick and put on parchment covered cookie sheets. Pop these sheets in the freezer for 5 minutes before baking. This will preserve the shape of the cookies while they bake. Bake at 350 for 10-12 minutes. In my over 10 minutes was perfect!
Recipe makes about 3 doz cut out shapes. Frost with your favorite icing. I used royal icing here to make the decorations that would harden and not get smashed if you stacked the cookies on a tray. This takes a while to dry, and does not taste as good as cream cheese icing or butter cream, but it will preserve the cookies and you can get the pretty designs. Have fun!
