Cheesy Stuffed Meatloaf
Bubbling cheese and moist texture make this meatloaf a great answer to the question “what do I with the hamburger?”

A new twist on old fashioned meatloaf!  This Cheese stuff Meatloaf has a yummy sharp cheesy layer in the middle and some extra healthy goodness throughout.  You won’t find ketchup and bacon in this meatloaf recipe! (No offense if you like the ketchup and bacon version)

Cheesy Stuffed Meatloaf

1 1/2 lbs of lean ground beef (85-15)

2 C fresh whole wheat bread crumbs

1 small Can (5.5 oz)  V8 juice

1/2 C diced onion

2 eggs

2 tsp beef bouillon – I use the “Better than Bouillon” – Organic reduced sodium

1/4 tsp pepper

6-8 slices of sharp cheddar  or whatever cheese you like – monterey jack works well too

Combine all the ingredients, except the cheese in a large mixing bowl as shown below.  This next part gets a little messy.  Take your rings off, and dig in.  With your hands, mix all the ingredients together and pat half of the meat mixture into a greased loaf pan.

Layer 3-4 slices of cheese across the meat to cover and then over with the remaining ground beef mix.

Cover half of the meat mixture with cheese slices.

Add the remainder of the meat to the loaf pan on top of the cheese slices.

Ready to go into the oven!

Bake at 350F set the timer for 50 minutes.  Add the remaining 3-4 cheese slices to the top of the Cheesy Stuffed Meatloaf and cook for an additional 10 minutes.   This will give the cheese on top a chance to melt and be nice and cheesy and delicious.   Cut into 1″ slices.  Serve with mashed potatoes and green veggies or salad.  This should serve 4-6 people depending on appetite size.
