Carrot Apple Raisin Muffins

These healthy muffins taste like carrot cake in a muffin cup!  You won’t believe you are eating something so good for you that is so yummy.  If you have a food processor, these become so simple to make.  Just throw the ingredients in your Cuisinart and presto!  I don’t even peel the apple :).  If not, it just takes a minute to grate a couple of carrots and an apple.  I use the already peeled mini carrots in the bag to cut out the prep time.  Leave the skin on both to add the extra vitamins.

Carrot Apple Raisin Muffins

2 C flour

1 1/4 C sugar

2 tsp baking soda

2 tsp cinnamon

1/2 tsp salt

Start the Carrot Apple Raisin Muffin Recipe by stirring these ingredients together in a large bowl.  Stir in:

2 C grated carrots

1/2 C raisins

1/2 C nuts or sunflower seeds or other seeds like pumpkin

1/2 C coconut

1 apple grated

This is all of your dry ingredients mixed with your grated carrots, grated apples, raisins, coconut, seeds and nuts.

Next, in a small bowl beat:

3 eggs

1 C vegetable oil

2 tsp vanilla

Make a well the center of the dry ingredients and add the egg and oil mixture.  Stir only until the dry ingredients are moistened.  That is the secret to delicious muffins.  Don’t over mix.

Scoop into muffin tins and fill 3/4 full.  This recipe should make about 18 large muffins.  (Not the jumbo ones like people like now a days).

Bake at 350 for 20 minutes.  The tops of the muffins should not be wet but should spring back lightly when you touch them.  Don’t over cook them.  Muffins should be lightly browned.  I won’t be offended if you frost them and call them a cupcake!  Haha.
