This recipe is super easy but presents like you have spent HOURS in the kitchen making something fantastic. You have, it will just not take you very long! It is a really nice company or pot luck dish. Just make one potato for each person and add an extra potato.
Accordion Potatoes Au Gratin Recipe
5 potatoes pealed
4 tbsp melted butter
1/2 C finely diced onion
1 clove garlic- mashed
1/2 tsp salt
1/4 tsp pepper
1/4 – 1/2 C freshly ground Parmesan cheese
Begin by peeling all of your potatoes. To make the cuts easy, trip off a small slice along one side of the potato so it sits flat on your cutting board. Try to make all of your cuts even and about an 1/8 of an inch thick. I hold the slice that I am cutting so it doesn’t fall all over the board. That way I have my potato basically as a complete unit when I am finished. I put the potato whole into the baking dish* and then fan it out by gentle pushing on the top to flatten it out. You will notice by the picture that I have fit the potatoes in to the dish. It doesn’t have to be perfect. It will look pretty however you arrange it as long as you keep the slices together.
Now you want to layer the other ingredients all over the top of the potatoes. Start with the diced onion. Distribute evenly over the top of the potatoes.
Add the mashed garlic to the melted butter and pore the melted butter over your potato and onion mixture. Sprinkle with the salt and pepper. Finish the dish with the grated cheese.
Bake at 400F for 35-40 minutes or until the potatoes are soft to the fork. If you have more potatoes in your dish, it will take a little longer.
*You should not need to grease your pan before adding the potatoes but you can spray with a good quality cooking spray, if you like.
